[V8] Ghost in the Speedometer?

In my case, it was the speed sensor. They seem to go bad.
They are pretty easy to change - but kinda spendy. Around $150 as I recall. I
went with a used one and so far so good.
btw, my symptoms were exactly like yours - the speedo would just disappear and
then come back. It got worse over a few months.
