I've been running Amsoil 15-40 in all 5 of my V8's over the past 10 years and have never had a problem. I am in the Richmond Virginia area and seldom gets below 20 degrees
 
Mileage ranges from 86,000 on the 93 to 185,000 on the 1990.  I used to run Mobil 1 and switch to amsoil about 5 years ago.  I try to change it about every 10,000 miles

I understand that concern but I haven't had an issue with it before. I've had 
many older Audis with 3 times the miles of my current V8 and used fully 
synthetic oil in ALL of them with no problems.
 
So, if you are to use the oil, what weight is recommended? Is the 0W40 a good 
choice for this motor as it was for my 2.7?

I highly reccomend that if you have a 15 year old motor that has always used 
Dino oil to NOT switch to Synthetic.  It will clean all that useful varnish that 
has kept the seals plugged and you will have oil dripping out of the motor.
