Yes you can do it. The trick to it is not to disconnect the wiring pull the ECU harness up thru the firewall and it's pretty easy. The "toughest" bolt is the top starter bolt and spinning the crank to loosen the torque converter. Other than that it's pretty straight up.

Well, the V8 body I have is rough (rust, cracck on black plastic on the front bumper, etc).....but the engine in strong. I found a V8 body here on the marketplace that has a shot engine (he thinks it's the timing belt), but from the sound of it the body is in decent shape, and he's in the same state as me. Sooo....if he e-mails me back and sends some pictures and all looks good, I want to buy the car and drop my engine from mine into his. Just wondering how costly/complicated would this be? I've done it all the time with mk1 VeeDubs, but this engine I can most definately not do and would need a shop to do the work for me. Any guesses/comments?
