I ran this exact same brake set up on our V8 for many moons and I can say,
without question, that 16" wheels will fit. I ran 16x8 UrS4 wheels and as
long as I was careful as to where the wheel weights were placed, I could
get away with no spacer. Although, I usually ran a 5mm spacer just for a
little "comfort room". If you didn't mind having the wheel weights on the
outside lip, then it wouldn't even be a concern.
16x7.5 UrS6 Avus wheels will clear with 5mm spacers as well.
My current snow wheel is a 16x7.5 ET23 BBS RS (Classic BBS Mesh Wheel) and
they clear without any spacer as well.
I did this specifically because I DIDN'T want to run 17" snows and it opens
up a lot more options for tires sizes. Ran 205/60-16 one winter and didn't
like it. They were great in the snow/ice, but dry handling and ride was
very so-so. Personally, I think a 205 wide tire is a tad on the skinny side
for these big cars. I also live in Colorado where the sun comes out after
every snow storm and melts everything, so dry handling MUST be taken into
consideration.
I eventually settled on 215/55-16 and they have been great.

BBK=big brake kit. Made with RS2 caliper adapters 01-03 S8 front 323mm by
30mm rotors and Porsche 928GTS calipers in front and S8 rear carriers with
stock V8q calipers and 04+ S4 rear 300mm by 22mm rotors. Require 17" wheel
minimum so that is the reason for the larger then stock wheels 3 times the
braking power.
I'd run 15" wheels if there was a way to get much more stopping power then
the g60's allow and the UFo's are nice, but very complicated and only single
piston.
