[V8] Starter fixed! another problem now....

Hi Folks!
Thanks to all who helped me with my starter questions. Apart from one snapped extension and kicking the bowl of engine oil all over the driveway, everything was fairly straight forward!
 
I do have another question however!
recently everytime I start the car (esp from cold) the revs fall sharply straight after the engine fires. It then picks up to normal idle before dropping again and then finally returning to normal idle.
The bounce is becoming more severe of late and it nearly always stalls on the first dip in revs. To get over this I have to use a little throttle on startup and gradually ease the revs down.
I remember my sisters Golf GTi doing a similar thing.
any suggestions?
