[V8] a vacation from the v8's

Well, I'm heading back to Texas tonight, and will be back to driving around the '02 A6 Avant 3.0 by this time tomorrow, and my V8's will stay up in the Pacific Northwest for the time.
This morning, I swapped a known good MAF from V8 #1 (a '90) into V8 #2 (also a 90). This actually seems to have helped the engine run a bit better. I won't have time before I go to install the new OXS and see if I still get 2341.
Still, V8 #2 seems to have lose power on acceleration, right in the 2000-2600 RPM range. It takes off just a tad slowly, then seems to balk when RPM's hit around 2000, and stays that way until around 2600-2800, when the transmission shifts. But performance of the car is noticeably improved, particularly since switching out the MAF.
So, one last V8-related question for a while...what's the correct oil temperature for the V8's when the engine is warmed up? On V8 #2, the oil temp gauge ticks up from the baseline to the first thin mark of the gauge after the engine is warm. It never gets anywhere near the 130 degree mark.
