[V8] Sputtering, stalling, and balking

On my annual drive from San Diego to Seattle in the V8. After a rather spirited trip up and over the grapevine in 100 degree heat she started acting up.
Throttle response is way off, at times non existent. 
Then with me mashing the pedal repeatedly, the old cruise control bushing demon appeared. Sticking the throttle wide open. Luckily, on this particular stretch of freeway 100 mph seems to be the norm.. And I was able to unstick it.
 I managed to limp her to the bay area, then had no choice but to take her to a shop. 
First a German auto shop in Dublin, CA. They refused to touch it. Then a Jaguar specialist agreed to take her in.
They checked fuel pressure and its good. I'm thinking O2 sensor, distributer caps, or coolant sensor? Don't think they even pulled the codes.     
Sucks paying someone $90 an hour who knows way less about the beast than me.
Any ideas?
