Going back to my old shop days.... There was a TSB issued by Audi on the fill capacity of the v8 engine. The 'revised' oil change specifications went from 10 quarts to 8 quarts (top of the dipstick to the bottom). The reason for this was excessive oil consumption complaints when the 'full mark' was used as reference for fill. Back when I had many just out of warrantee v8 under my supervision, I attributed this consumption to one of the *worst* (if not the) PCV system designs in the v8 engine. My observations (interestingly enough Ingo, with the PO of your first 5speed v8) indicated that sump sloshing would partially block the sump chamber, which would cause excess vacuum at the back of the DS head, literally sucking oil into the intake system. The revised fill level reduced the amount of sump blockage enough so that oil consumption 'appeared' to decrease. Best put - stabilized.
Also worthy of note, Audi considered 600miles per quart oil consumption within factory specification. One might consider that excessive, but I am convinced they are right, because the PCV system is a faulty design that would make that consumption normal.
IME with oil weights, any flavor/weights of synthetics will work fine. Back when the v8 was produced it was designed to be a dyno oil engine. Which means the increased temp range of synthetics means find which one is on sale? Worthy of note, the diesel synthetics tend to have the higher zinc content than the automotive versions.

The confusion (as I recall) lies in the fact that the initial quart
capacity includes the oil that's in the rather substantial oil cooler below
the radiator.
