Nice Score on the V8!
I just have a couple of random thoughts here -
First, when the clutch is worn out, it gets very hard to push in. When I replaced the clutch in my V8, I got the transmission back in and went to bleed the hydraulic line. I convinced myself that I had forgotten to put the throw out bearing back in because the pedal went down so easy. Even though I had the old bearing in my hand and could not find the new one in the shop, I took the transmission back out to verify it was there! It was. So a new clutch and some rehab for you may be all you need.
It may not be easy to find an OEM clutch though either. From what I found about 6 years ago was I got one of the last remaining two clutches in the country. It is no longer manufactured. There may be some after market parts though. I think the company was fortwayneclutch.com <http://fortwayneclutch.com/>.
Second, I wonder about just searching for a nice factory automatic? It may be easier in the long run to go that way. I think I recall that the transmission tunnel is different for the Auto cars, and you will need the engine ECU as well, and the instrument cluster too to do it right.
Third - slap a 2.7L turbo in there! Plenty of parts availability, plenty of power, and probably better gas mileage too. The electronics would be a nightmare though.
