  Why would you run two thermostats?  Especially in today's electronically
controlled diesels?  The systems are designed to run at a given temp and
the cooling systems should handle the excess heat be it below zero
or above 100.  The thermostat should hold a temperature where the
engine runs well.  If the cooling system won't handle a base temp of
10F higher, then the system needs work.
