By "decanter" do you mean to say "separate"? I've held unopened
containers of mineral motor oil on my shelves for years and have never
noticed any change having taken place when I finally open them. They
appear to be quite stable when stored for lengthy periods in unopened
containers. Was the av oil you mention made as a fuel or as a
lubricant? Does it have additives as does car motor oil?

Do you know that mineral oil, especially the longer molecules, will not
shear in an engine? My sense tells me that there must be some shearing
especially in the bearing journal area of a hot, hard driven engine. My
guess is the additives deplete as the engine is running rather more than
when the engine is sitting. There does seem to be a time period set for
change intervals though.
