The flat surfaces I have used in the past for similar procedures are pieces 
of polished cut stone (marble, granite).  I have piles I have salvaged from 
construction dumpsters (one of my favorite places to shop).  Even several sink 
cutouts from granite (hard to get flatter than that- a good reason to befriend 
countertop fellows- aptitude in homebrewing helps).
