Did you have the flywheel resurfaced or at least cleaned it up and buffed it
with some sandpaper to get the glaze off it?  That might be the problem. It
is good practice like with brakes to have the rotor, flywheel and drums
resurfaced when you replace the brake pads and clutch disk.

IIRC some plates tend to snatch until set in.
