I have 205/60x14 tires on my 91 ECO jetta. They are a little tight, when I
go over a hard bump and max my suspension out they rub a little. Other than
that they ride nice and I run max pressure in them what is written on the
side wall of 44psi.

The correct size tire for an A2 car would be 175/70x13, or optional was
185/60x14. IEach is around the 910/915 revs/mile range. If you want
mileage, you should stay narrow, but going a lot taller will not necessarily
help (plus you suffer aerodynamic penalty from increased under car airflow).
I have never heard of a 185/75 anything tire.
The simplest upgrade (if you are on 13 inch wheels) would be 165-80x13, or
on 14s you could go 175/65x14, and drop into the 890 rev/mile range. I like
to stick with very hard inflation pressures, and low rolling resist tires
for a mileage car. Something like the MX4 Energy Michelin. Don't know if
it is available in your sizes, though.
