I've always been under the impression that you wanted the oil to get above
212° in order to boil off any accumulated moisture and avoid the creation of
sulfuric acid and the rapid wear on your engine.
That being said, I would also not want the oil to exceed 230° or so and so
an aux oil to air cooler is a nice addition.
