  I've NEVER found piston to valve clearance a problem on a 
surfaced head even on one that was surfaced until they hit 
the valves with the "sander"!  I haven't found thicker head 
gaskets needed afterwards either.  
  As the head wears from new, the valves wear into the head 
deeper.  No complaints there?  Surface the head and you simply 
gain some of that back.  Most of the combustion chamber is the 
prechamber and the space between the piston and head not so 
much the valve pockets.  A new head Milton looked at actually 
had the face of the valve above the plane of the head! (protruding)
  As Brian noted, grinding valves requires cutting stem length 
in order to keep the shims somewhere within reasonable 
thichness ranges of available shims.
