  I believe there's a wire clip within a slot of one of the escutions
around the hole in the top of the seat back.  I usually end up 
pulling it but I think you can squeeze or press in on the right 
spot of it and it opens up to release the shaft of the headrest.
  You don't find repair of a rotted foam insert on the accelerator, 
in the Bentley or certainly the owner's manual.  It's one of those 
things that aren't considered a regualr repair item.  Just like you 
don't tend to find door or fender replacement instructions.
  If it's similar to a Rabbit on the pedal end of the cable, the 
big grommet thing just pushes out and a new one pushes in.  
Not simply but they do just push in and out.   It's probably 
much easier to remove the pedal lever assy and do it on a 
bench.
