thermal transfer occurs when the water is against the metal surface, 
remove the bubbles, get better thermal transfer.  Pretty basic stuff. 
Granted most cooling issues can be resolved by getting as much of the 
air out as possible. All I know is the stuff works. You can't however 
rely on it as the sole cure for an issue. You have to get the air out.
