Here is the remaining info on my temperature senders: both have the same part number, 049 919 501, same voltage - 12V, same max temperature- 120C and some other code of 804/6/2. The only difference is the date, one is 2/80, the other 5/89.
The 5/89 sender is the one that did not function correctly on the temperature gauge. I will just be vigilant and see what happens.

Here is basically what I have so far;
Well, now things are really confusing. I have a CR code NA engine, that was rebuilt and installed in a van before I bought it.
The outlet was already installed. I have a 1982 caddy with the stock cluster modified by replacing the clock with a 1984 GTI tachometer. If required, I suppose I could pull the cluster and get the actual part number.
All I know is the sender that was originally connected to the temperature gauge only registered 3 1/2 marks maximum when I was driving in 105 degree temperatures. The glow plugs appeared to function properly. Have not burned out a plug to date.
With the wires swapped, I now have a fluctuating and more realistic reading on the temperature gauge and so far, the glow plug system is functioning properly as well.
I will take a magnifying glass and see if there are part numbers on the senders as well as voltage and max temperature.
I found a sender on another outlet flange that contained the following info: date 4/81 temp 120 C voltage 12V and even had the part number 049 919 501 stamped on it.
Will review Roger's write up and present documentation on my engine tomorrow.

Yes, I think they were initially different, then the same and then different again with
the GP sender changing from a variable resistor to an open/closed bi-metal switch:
