Rather then using two one notch gaskets I think it would be best to shave the piston tops down at that point. The head gasket is already a weak point so you would have to replace more often. You may be able to have a custom copper one made or something. I would think that just as long as the valve heads aren't sticking past the head the only way to need a thicker than 3 notch gasket would be if you surfaced the block which you aren't suppose to do.
