I have done bunches of Rabbits. Almost always by setting the engine
on the ground. If you have an engine hoist just hook on the engine/tranny and
set it on the ground. Then hook unto the front bumper and lift the car.
Slide the engine out on the ground. Simple, easy and very little juggling.
It will come out the top if you want but it usually takes some maneuvering
and rehooking the lift point.

Got the engine disconnected, I had to remove the rear transmission mount. I
swung the engine away from the passenger side engine mount towards the
front, now just have to lift it out

I have removed and installed engine/tranny combos in several A2s, always out
the top. Never occured to me to lift the car off the engine.
I can usualy drive the car in to the garage, take off the front "clip", rad
etc, drop the axels, shift links, etc, and have it out in 2 hours.
Single handed old fart, with overhead, permanent ceiling-mounted electric
hoist.
A bit tricky, have to lift the crank pulley clear of the frame, then swing
sideways a bit to get the tail of the tranny clear on the other side.
Not rocket science.
Sure is easier to work on things like clutches, on the special steel bench I
crafted from an old model 15 teletype table, with added heavy duty casters.
