[Vwdiesel] installing main crank seal??

I usually use a seal extractor like the one pictured at  http://www.pbase.com/kneale_brownson/image/90625179   May be a Sears tool,  but most FLAPS also have them.  I've used this on engine seals, steering pump seals, etc.   I have a collection of pieces of various sized Schedule 40 plumbing pipe I normally employ for reinstalling seals.  Most seals get a good coating of engine oil before they go in--except the Audi 200 rear main seal.  That came with advice to not lubricate.

How did he get the bolt out? I assume welding, but I'd like more
details, please.

As far as the front seal, I'd do it the same way as your mechanic
suggested. There are some pins on the backside of that carrier to hold
it in the correct position.
