Even easier is to use the coil T15 wire from the gasser to power the fuel stop solenoid.

That's what I used when I converted my Fox, rather than running a new wire. If you're lucky you even already have a ring terminal on the end and you're good to go.

I am no expert on those Rabbit trucks.
But.
Yes, I would agree you could use the + to the fuel pump to power the fuel stop
silinoid.
I would say yes also to the wire for the water temp and the wire for oil
pressure idiot light in dash.

my advise, hook up a 2 1/4 inch VDO for oil pressure and oil temp
I have an extra oil pressure gauge and sending unit for sale (used but in great
shape) 0-150psi if interested, p-mail me.

i have a gasser Rabbit pickup and i want 
to convert it to IDI NA diesel 
have a good 1.6 engine ready to go.
what modifications have to be done?
what has to be disabled?
what has to be removed?
will the exhaust mate up?

can the water temp, oil pressure switch
wires be used without conversion.
can the gassers fuel pump wire controlled by 
the ignition switch be used for the fuel 
shutoff solenoid?
