In a Dasher, about the last thing I would do is reduce the stroke. 
 That is a lot more car than a bunny, and a 1.5 struggles at best to 
drag that around.  With a shorter stroke, you will need more cylinder 
pressure (and crank-rod load) to make the same amount of torque at the 
same engine speed.  I would ALWAYS opt for longest stroke possible out 
of a diesel setup (since the revs are so low) and let the turbo work 
the greater displacement without having to resort to exotic bits of 
hardware to contain cylinder pressures. 

BTW:  you really need to check in at vwdiesel.net - this is where the 
IDI crowd hangs out and there is a ton of experience and enthusiasm 
there.  You will find both DIY and commercial solutions to making the 
pump and injectors perform.  The hot tip for a turbo for your setup 
would probably be a VNT 15 as removed from ALH - IF you can control the 
gates (IMHO, needs to be done mechanically by boost to be the ultimate 
retrofit blower).
