[Vwdiesel] Where can I find a listing of the VAG-COM measuring metrics

I was wondering if anyone here has working knowledge looking at the measuring blocks in the un-registered version Vag-com software I got with my ODBTOOL some years ago.
 
I finally got around to swapping the thermostat after having the CEL on and off for a year.  same code 16512\P0128  Coolant Valve (N214)
It seemed as if my thermostat was stuck 1/2 open.  Put a new one in and I saw little change in warmup time for the coolant temp needle to get to the middle.
 
One thing I notice is before this error, the car would always run at dead center coolant temp, 190F
This I have heard is not a true temp reading but regulated by some electronic gizmo to makes it look perfect and nice for the none engine person.
Now my car seems to read true temp.
I see a top engine coolant temp of 75.6C in Vag-com (un-registered) measuring block 007 when driving the car hard on highway to work.  Posting on TDI-Club say this should be over 77C, so I am pretty sure I am looking at the correct measuring block catagory of 007 in Vag-com, but I am no expert.
 
I can watch the engine warm up digitally with the software and laptop running in the car as I drive out to the highway.  It will not trigger when I do this trip.
It only triggers if I am driving around town and the car does not heat up in the amount of time the ECU says it should.
 
TDI-Club posting I found when googling 16512\P0128 says you need to change the ECU program and extend the amount of time before it triggers the CEL because it sees low coolant temp on sensor P0128.  ECU only allows 10 minutes when it see a qualifing engine start and your are off and running.
Very specific to my engine only, Jetta

It does not seem to be in line with the cluster temp guage in F.  75.6C = 168F and the needle says it is 1/2 a click under 190F.  So, I could indeed have a failing sensor or I am looking at the wrong block code measurement in Vag-com.

Any idea's, I am pretty sure I can keep the code off for the next few days by only driving to work and then to the inspection station to get it inspected, but this will be a pain for the next year until I can fix it.
