I too am now in WI. I have a scan gauge and know the exact temp of the car. I park outside and can only plug in at home. If I plug in for a few hours I start at 160 dF. It then drops to about 120 dF from the oil hitting the oil cooler and other things moving around. By the time I am at work 10 miles latter I am at around 140-150. When not plugged in that same 10 mile drive back home I get to about 120-130. Nothing wrong with the therm trust me. I have my radiator blocked as well with the OEM covers (no longer sold/made) but you can block yours off with pipe insulation. That is driving 55 for about 7 of the miles and 35 the other 3. It takes about 20 miles to get to 184 (which on the dash 160-200-hotest I've been- says 190). The needle starts to read around 120. There is two readers for the car (sensors) One that tells you that you have heat but doen't moved enough so people don't get worried a needle on the dash actually moves and the the one the car actually uses to read the temp for fuel injections, etc.
