  About half the money goes into the heads.  The machine work below is boring (if neded), 
r&r intermediate shaft bearings (generally needed) and grinding the crank (rarely needed).
On the heads, you can get a couple drifts and a reamer and do guide yourself, replace the 
exhaust valves and only pay to grind intake valves and all the seats (generally needed).  It 
will probably be good to do a light surfacing which you can pay for or use sandpaper on 
glass or a long board sander, or gently with a file.  After grinding seats and new or ground 
valves you have to set the valve stem length by trial fit, measurement, etc and that takes 
time and patience.  Most shops don't tend to go to that extent but it makes for a much 
better head rebuild.  A little porting seems to help too.   :-)
