I did think about that, but I have an update!
In some desperate googling last night, I ran across Weddle Industries which looked like they did work on VW Transaxles. On a chance, I called them up this afternoon.
Guess what? They had some input shafts!! After talking to the guy, he said they bought a pile of transmissions which he said were "from VW buses with the rabbit motor" and he matched it to the part number (091 311 105C - That Cis very important in this case!), and described it as extra long "longer than any normal input shaft." Sounds like exactly what I need, and for $49 plus shipping, one is on the way.
He said that they actually have a few more of the shafts and bell housings if anyone is interested...

Hi Dave,
Have you considered asking a good machine shop to lengthen the shaft for
you? with some careful cutting and welding I am sure it could be done.
If a broken crank can be welded up, I am sure lengthening an input shaft
would be child's play.
