A/C woes, MK-II

Well, now that the compressor has lots and lots of freon and chills
nicely, it has developed a new habit. (I could really learn to *HATE*
Audis). The compressor no longer shuts off, it just keeps chilling
the evaporator until it ices up. (it used to hold between 40 and 60F,
depending on where the lever was; now it just locks on).

Any suggestions? I know next to nothing about the inner workings of
Audi A/C systems. 

I assume I will have to replace the thermostat, which means pulling
the whole damn evaporator off, not to mention the damn center console
et al to get at the control head...deep heavy sigh...
