Yup, Hydraulic actuation means it's self adjusting. When it slips, she's all
done.

"Also, in pricing new clutches I am getting a wide range of prices"

Bill, that $1000 quote is *way* too much! I'd never pay 30% of the value of
the vehicle for clutch work. The $700 quote reflects the dealers higher labor
rate, but you don't *need* a dealer for this project. The $500 price sounds
realistic from a trans shop. You mentioned that they've done 5000 series cars
before, that would imply that they're familiar with the breed. They'll be
using quality parts(they don't want to do the job again for free) and
probably guarantee their work for a finite time/mileage. 

As a reference point, I paid 149$ for a clutch kit for my '84 4000q and did
the work myself. That'll give you an idea on the profit margin on this
job.....
