20v Motor - Stalling

Need some help here...

I've had the Coupe quattro for about a month. A few little niggling problems I'll deal with 
eventually, but one I need some help with now... 

Car starts and runs fine after sitting, either overnight or a couple hours. But, If I run the car long 
enough to get everything up to temperature, when I restart, it stalls whenever returning to idle. It 
runs fine otherwise, just every time I put in the clutch to slow down, the tach plummets straight to 
-0-and stalls. After warming up for a while, the tach still plummets, sometimes bouncing off 0, 
sometimes going down to about 200 rpm, before returning to a normal idle, 800 prm.

What do I check? This is very annoying to be in traffic and having to cluth start or restart the car 
every minute or so...
