As far as stealth installations of CB, I installed a unit in my Porsche
(Cobra, if I remember) that had all of the controls located on the
microphone unit - channel display/select, volume, mute, etc. - with
the main system being able to be mounted out of sight ( under
seat). When parked, microphone can be thrown under or behind
front seat and unit is totally hidden. On my Coupe Quattro, I also
have installed a compact unit in the parcel shelf to the left of the
steering wheel.
As far as antennas, the wave of cellular phone installations has reduced
this problem too. There are available antennas that look very like
a cellular phone antenna when somebody is looking at your moving car.
Antenna Specialists I believe is the prime manufacturer.

It's a pity that I did not get to see it during our last meet in
Harrisbourg at the Mid-Atlantic Q-club.
Mine is hidden in the driver side parcel shelf, under the dash. I
hardwired it's output to the LF speaker.
The antenna is a front mounted sloped one, of a through the glass
variety. A very stealth install indeed.
