The best way to protect your dash is to keep it away from the sun.
Use covered parking wherever possible, and when that is not feasible,
use a good quality (foil-style) windshield sunshade, or better yet,
a car cover.  The car cover protects not just the dash, but your
car's paint as well as all of the interior.

Don't put any kind of goop on the dash or other interior plastics.
