I've seen 'em for about $50.

The heat actually goes on the surrounding metal, not the sensor.
Differential expansion is what you're looking for here.

This socket is available for about $8 or so from your local parts place.

I'd recommend a good solder joint in this splice rather than just a crimp.
Good insulation is also important, as you suggest.
