There seems to be some confusion about rotor turning. Turning can
eliminate light warping or scoring, as far as the rotors are thick
enough so they won't be below specification after turning. If the rotors
are badly warped or/and scored and they're already considerably worn
(too thin) turning makes no sense, UFOs or not. Certainly if the rotors
needs replacing because they're worn near the specified thickness, you
can't cure them by turning ;-)

Audi recommended converting the brakes to the conventional ones used on
late 5Ks/200s. Some drivers were reporting reduced stopping power after
the conversion, which seems logical given increased weight of the V8.
The aftermarket calipers/rotors seem to be a solution, although
expensive.
