In my 84 & 87 5KT’s the multi-pin temp sensor controls temp gauge plus
other functions. You can try disconnecting the other ones and watch
gauge operation. 
Every time I’ve needed a temp sensor, the parts guys at Carlsen always
want to look under the hood at the sensor. It seems that even the
micro-fiche is vague as to what controls what. Same for the Bentley,
neither of my cars match anything in there about temp sensors.
