Easy - to increase the sales of radiator caps, hoses, and sundry other bits!
Actually, because water boils at a higher temperature under pressure than
at atmospheric pressure - normally water boils at 212 degrees F or 100 C,
but at atmospheric (14 psi) plus (say) 7 psi in the cooling system, it
won't boil until it is somewhat hotter - someone probably has the
pressure/boiling point chart, but I don't.
