A/C Removing causing high RPM idle??!! Any ideas?

I have purposefully removed my A/C compressor/ radiator etc. and

now I have this 2200  RPM idle if I turn on the climate control.

Also the car wants to fog up right away,upon starting, so I need to

turn on the defrost and (of course) the idle climbs!#^%@%

I take it I have some kind of open circuit now. 

Any one out there have any ideas about this ?

It is a 87 5k csquattro by the way.
