I assume from what you say that you have the cable drive speedo, not the
electronic one. It sounds like you need to lube your speedo cable. I have
just posted the procedure today to another lister with the same cold-related
noise.
The problem could also be in the speedo head itself, although the cable
is the most likely source of the noise. You can lube the drive bushing on
the speedo with WD-40 (the real stuff, not the spray stuff) when you have
the speedo out to do the cable. I had one VW which had a noisy bushing and
several other cars with noisy cables.
