Off the wall once again

Hi Y'all,

Please forgive the WOB but I have a project which I'm asking for help with.
  I have a favor to ask of you or, more likely, your wife.

The ladies of our church are putting together a cookbook based upon the
preferences and differing heritages of our membership and friends (that's
where you come in).

Would it be possible for you to send me a recipe or two of your ethnic or
regional favorites?  What we want are real practical recipes which you
like.  I suppose a recipe or two which start out with "quarter one medium
springbok" or "parboil one polar bear" might be fun and get included but
this would be hardly practical.  :-)
