Is that domestic or imported kiwi?
I attempted to prepare the recipe (in the aussie's native habitat) in
the early 70's. - very difficult to prepare especially if:
1. You are not familiar with the species, their habitat or prep. times.
2. You consume more of the marinade than used for prep.
3. As with lobsters, the more flavorful female of the species is
used. While they take to a marinade as well as the male, they tend
to be
more difficult to handle and can easily "turn" if you are not
careful during marinating.
For best results, native chefs de cuisine recommend that one always
include a male aussie when preparing a female aussie; and as with any
exotic species, handle with care or you may be the one that lands up
being roasted.
