There are many different thermocouple types (i.e. different combinations of
metals or alloys at the dissimilar junction), and for a simple gauge such
as I think you're using, only one thermocouple type --the one it was
designed to use--can produce a meaningful temperature reading. If your
gauge specifies, say, the use of "iron/constantan" thermocouple, then any
thermocouple sensor with that construction (junction composition) should
work OK.
