Question- what's wrong with the fuel-rail whipped up by the 034EFI
guys? It's a little over $100, but it's ready-to-go.

Hoses don't sound like a great idea at all. If a hose(or one of its
fittings) were to leak or burst, you'd be in serious trouble. KISS
principle? :-)

Regular one...the frequency valve is for 'fine tuning'(the plate
serves as a 'macro' adjustment.)

This is sorta swapped with EFI- the FPR with manifold input becomes
the 'macro' adjustment.
