The Pentosin CHF-11S synthetic hydraulic oil can be used to replace
the old CHF-7.1.  These are the official Audi fluids (Pentosin is the
OEM for Audi).  In fact Audi switched from the 7.1 to the 11S around
the 1989 timeframe without changing the part number (G 002 000).

I don't know about the LM gear oil, you're right that Audi specifies
GL-4 for the manual transmission, so I would avoid the GL-5 fluids.
The Redline MT-90 is still a safe bet.

As for engine oil, Mobil 1 is of course a good choice.
