I believe Dinan, among others does it as a part of some of their kits.  & I
believe it is exactly that, the swap of stock electronics into a larger
tube.  These particular BMW MAF's (unlike the older UrS4/6's) are designed
so that the sensor can be removed and replaced; in Dinan's case they keep
the sensor and replace the barrel/venturi it is sitting in.

A kid out in California had it done with a after market turbo kit he had
worked up for a Passat VR6, but then as you point out, a tuner with one of
those magic Green Lantern decoder/encoder rings, Garrett Lim of GIAC, was
brought in to do up a set of custom chip profiles with the car on a dyno.
