O2 sensor only comes into play closed loop.    WOT ( when all the fun SHOULD
start) is open loop, no help from the 02 sensor.  WOT is also when you build
boost -- do you really want to risk a mixture that is less than ideal with
20+ lbs of boost?

You guys have to remember that the O2 sensor system is in action here.
Even if your MAF is off calibration for the values in your ECU, you
will sort of limp along.  Because when you get to a steady state with
the go-fast pedal, the O2 system will put the mixture where it want's
it to be.

You may have stumbles or flat spots getting to steady state, because
the basic mixture is being set wrong by the ECU because it is getting
invalid signals from the MAF.  Same is true with different injectors
or when you've been fiddling with the fuel pressure.
