If you're talking about the large plastic "pan" that sits under the engine,
it's there to catch all of the miscellaneous fluids that will inevitably
make your garage floor look like a multi-colored Rorschach test.  ;`)

I recently purchased a 93 S4 and noticed there is a missing "shield"
beneath the front of the car.  I'm wondering what this is for.  Is it
for aerodynamics, cooling, protection, or what?
