my memory is fuzzy, but this didn't give me much trouble.  there's a 
retaining clip that you can pop off with a screwdriver.  when i did the
driver's side CV boot, i removed this clip before i removed the CV joint.
i forgot to do this on the passenger side.  the CV joint came off anyway,
without much trouble, destroying the clip in the process.  no problem, as 
the CV boot kit came with a new clip.

you have the right idea: use the CV bolt to remove the CV joint.  if you
find that the bolt is not quite long enough to remove the CV joint 
completely, remove the CV bolt and put a small bolt or nut inside to
give the bolt something to press against.  an impact wrench is very
helpful for this removal.
