Bob,
I would look at the actual wires of the MAF cable then. Might as well
rule it out. I don't know how long the cable is but I'd look for any
damage, whether it be melted, cracked, etc.
A bad MAF cable can give both a non-start as well as teh bucking
conditions you described.
Otherwise for now I don't have any other ideas, unless you want to
sell me your car for $1 so I can use it to fix mine! :-)
