Jim,
On the earlier Audi AC setup (5K/100/200) once the Multifunction sensor
overtemp trips the AC is disabled to avoid overheat. This sensor is not
what is used to drive the dash temp gauge so things look "normal". I
would imagine they kept the same setup for the later cars, there should
be some guidance on this site I believe:

I did run the issue with the spade connector behind the headlight
killing my fan., if you trace the wiring back from the electric fan to
the drivers side you will run into it buried deep under the hoses, hard
to spot. I'd start with that and measure the voltage while you are in
there... no volts means the problem is upstream.
Testing relays is relatively simple, energize the coil with 12V and
measure resistance across the normally open contacts (should be very
low), there are some good sources in the net for testing Bosch relays.
